Healthier Ants on a Log

I love classic snacks, and even better is updating them to make them healthier!  One of my favs is Ants on a Log.  I'll share the recipe below.

Ants on a Log
2 Pieces of Celery
Almond Butter
Blueberries

Clean and cut celery.


Spread almond butter on celery.


Clean blueberries, dry and place on almond butter.

Yummy Cucumber Salad Recipe

Since I had an ungodly amount of cucumbers I have been making them in as many things I know how.  I came across a yummy Cucumber Salad recipe, and I'd like to share it w/ you.  I made some additions.

2 Whole Cucumbers-rinse, chop, and salt; leave in colander to drain
1 Onion (I used a small red/purple)
1 Bell Pepper (I used Orange)
A bunch of small tomatoes from my Gpa's garden, and I am still unsure whether they are grape or cherry (recipe didn't call for them)
Chopped cilantro to your liking
Lime Juice to your liking (recipe called for juice of 2 limes)
4 Dashes of hot sauce (this should be upped if you ask me)
Agave-just a touch (recipe called for sugar-psssssst, we don't need that!)
Garlic to your liking
Curry Powder 1/2 tsp and that is FAR too little if you ask me!
Avocado-chopped, add last or right before serving

Mix everything, then add in the cucumbers.  Chill.  Add the avocado right before serving.  Enjoy as a salad or as a yummy sammi.  I enjoyed it on an asiago peppercorn toast the first time around, and had it as a wrap the 2nd day.



Hehe, it was soooo good I couldn't wait to finish making the sammi to eat it.  I liked mustard on it very much.  Yellow mustard the first day, and spicy brown the second!

The Green Bus at Yoga in the Woods

Last weekend I had the privilege of attending a workshop presented by The Green Bus Project at Yoga in the Woods.  The Green Bus Project is put together by Moses, Zeina, and Bella their pooch.  I attended a yoga practice Friday night, that was refreshing.  It included chanting, togetherness, physical asanas, meditation, gongs and a meditation bell, as well as live music with African Instruments by Jeremy Ardnt.  The physical practice was a challenge for me that day as I had done a run/walk in the morning, and kettlebells at noon, but the challenge was welcomed and embraced.  It was such a treat to share things I am passionate about with such an awesome community of yogis.

Saturday I attended The Yoga of Nutrition.

I was able to learn to make and sample such simple delicious recipes.   We learned to make a POWERFUL smoothie.  All of you that know me well know I am the queen of smoothie making.  Yet, I still learned a lot.  I know how to make a yummy tasting smoothie, but now I also know how to make a healing smoothie with specific benefits.  Next, we learned to make a green drink, and I was introduced to the power of adaptogens and superfoods.  We also learned a yummy way to prepare Kale and make it into chips.  In addition to a yogi tea similar to chai, YUMMY vegan taco meat, and even chocolate dessert in a healthier way.



On Sunday they held a Masterminding and Manifesting workshop that I wasn't able to attend, but I heard was GREAT.  They also had a Women's Circle around a bonfire at Maureen's.  It was described as, "empowering and freeing."

If you ever get the chance to attend a Green Bus Workshop I encourage you to do it!

A New Chapter

Thanks for checking out my blog!  

I am a personal trainer & yoga instructor.  I am a wife and mother.  I work full time as an administrative assistant, and my career goal is to do what I love and pay the bills.  I am transitioning to that.  I feel blessed to have found my purpose.  My goal is to help others find that same purpose w/in themselves.  My journey to wellness wasn't a direct route, but I found it. And yet my saga continues.  On this blog I will share w/ you events I am involved in, my struggles & triumphs, health & wellness tips, recipes, and interviews.  Pretty much everything & the kitchen sink!  Please follow me if you so choose, and if you have any requests feel free to shout them out!
